Tatiana's Bottomless Sexy Salad Bowl
I often get asked what I eat to stay healthy. Here is one of my favorite dinners that will fill you up. A quick and easy fresh salad dinner bowl you'll feel so good after eating. Use preferably organic ingredients. Amounts are subject to your desires of course. Enjoy!
Boil one egg and cool while preparing recipe.
Salad:
2 cups romaine lettuce rinsed and broken
Seedless cucumber slices-desired amount
Toss with 1-2 tablespoons of fresh lemon and cold pressed olive oil.
Salt to taste.
Set aside for flavors to mingle.
Rice-vegetable mixture:
1 cup pre-cooked whole brown rice or desired whole grain.
2-3 tablespoons frozen peas
1/2 cup each fresh or frozen broccoli and asparagus
1 stalk of celery- added towards the end of steaming, or raw.
Chopped fine red onion to desired taste -added towards the end of steaming, or raw.
Steam all ingredients in a steamer till vegetables are bright green.
Remove and combine rice-vegetable in a mixing bowl with:
Turmeric to taste, up to 3/4 teaspoon
Dash of salt
A few shakes of oregano
1 teaspoon cold-pressed olive oil
Lemon zest from salad lemon to taste
In a bowl add salad, rice-vegetable mixture, and chopped egg.
Serves 1-2.
